Day 1: Dinner – Raw Avocado & Tomato Burittos

For dinner we decided to make the avocado and tomato burritos. When we bought the produce for our project, the avocados were not quiet ripe, so we needed to wait for them to ripen, but I found one that was soft enough to smash with a fork. Added some cherry tomatoes (cut in half) to it and some minced garlic. Then added some chopped basil, some black beans (canned, not raw) and mixed it all up nicely. Wrap it all in a lettuce leaf and you have a burrito! I had two and it filled me up. The left over chocolate balls were our desert, the kids love these things. Now time for some good tea!
