Day 56: Juice Fasting Exit – Raw Salad Recipes Idea #23

The beauty with raw salad recipes is that you can easily change it up by replacing or adding an ingredient or a few and that makes the salad taste different. Here is a raw salad recipes idea #23. Why 23? Well, I didn’t want to start from 1 because I probably have already done about 23 salads in the past… just guessing there, but I think 23 is a good number to start with.

I had an apple for breakfast and then a nice spinach banana smoothie a little later. Did I tell you I used to hate apples? Yeah, I would not eat apples at all…they would make me feel bloated and actually hungrier. I had to have my sausages and eggs breakfast (and in that order too). After the juice fasting, real food started to really taste good. Apples, bananas, grapes, those things I would never eat. Another reason is because organic fruits taste so good compared to raw-potato-flavor of conventionally grown fruits.I really enjoy the apples, bananas and grapes now. And eating one apple fills me up and lasts about 2 hours.

For lunch I had a bowl of Jenni’s famous Borscht that we’ve come to love durring this juice fast. We’ve been sipping on the broth from it off and on, waiting until the day comes when we can have the whole thing with the cabbage and all the veggies in it. Today I finally did. But it is not the same without Jenni.. it feels like going on a date by your self. She has 2 days left on her liquid fast and then we can have raw food together.


The salad recipe below is just something I threw together based on a zucchini pasta recipe I found in my raw food recipes book I have (see ad on right). By the way, this is by far the best raw food recipe book that I’ve found and it is getting a lot of use in my house. It is full of awesome photos of the food that get your mouth watering. I recommend this one as the #1 Must Have Raw Food Recipe book. The pasta in the photo though looked kinda light, so I had to make it more exciting and filling by adding more fun ingredients to it.

Raw Salad Recipes Idea #23

Ingredients:
1 Zucchini Sliced Thin with a Potato Peeler
1 Head of Lettuce
Any Kind of Sprouts (I used clover)
2 cups of Cherry or Grape Tomatoes Cut in Halfs
3 Green Onions Chopped Thin
1 Baby Bok Choy Sliced Thin
7 Small Mushrooms Marinaded in Tamari & Olive Oil for 10 minutes
1 Parsnip Peeled & Ground Up in a Food Processor
1/2 Lemon to Squeeze Juice On Top

I started with plating the lettuce first, I ripped it into pieces to create sort of a bed to put other ingredients onto. Then you can really layer the other ingredients in any order you would like. I left the tomatoes, then mushrooms and green onions for last, and then drizzled the parsnips over the top. If you want you can also use the tamari marinade from the mushrooms as a dressing but just a little as it is real salty.

We liked the salad a lot and some version of it will be featured in out meals again some time. Those marinaded mushrooms are a real hit in our house. I think the ground parsnips are also good as a Parmesan Cheese substitute, well the texture anyway, not the flavor. Maybe I can figure out a way to make it even taste a bit like parmesan, that would be cool.
