Day 57: Juice Fasting Exit – The Yoga Salad With Pistachio Raw Dressing Recipe

This is Saturday and today was a pretty busy day but I managed to throw together this good salad for dinner. It is a Yoga Salad with a pistachio and avocado raw dressing that was finger-lickin-good! I guess the salad it self could be anything really, smothered in this pistachio dressing, pretty much any kind of salad will taste amazing.

I slept in this morning and by the time I got around to my morning apple it was already 10 o’clock or so, and then my banana spinach smoothie time was a little after noon so I kinda skipped lunch and just had dinner. So here is the recipe for the Yoga Salad.

The Yoga Salad with Pistachio & Avocado Raw Dressing Recipe

Salad Ingredients:
1/2 Cabbage cut thin
1/2 Yellow Bell Pepper
1 cup Snow Peas cut into thirds
2 stalks of Celery
1 Apple chopped up
1 Pear chopped up
1 cup Broccoli
Some Sprouts (I used Clover)

Pistachio Dressing Ingredients:
1/2 cup Pistachios
1/2 Avocado
1/2 Yellow Bell Pepper
1 tbsp Tamari
1 Lemon (juice)
1 cup Water

For the salad, just arrange the ingredients on the plate as you like, the order does not really matter. Then to make the sauce, blend the pistachios until they are pretty ground up, then add the avocado, half cup of water and bell pepper. Blend that up nicely and then add the rest of the dressing ingredients and add water a little by little until you have the thickness you want. Pour the dressing over the salad and enjoy. One other awesome thing you can do is use this dressing, if you keep it a bit thicker, as a vegetable dip. mmm… Gonna have that for lunch today I think.
