Day 58: Juice Fasting Exit – Tomato Pineapple Raw Pizza Recipe

We’ve done a raw pizza recipe before, when we just started our raw food quest but this time it is so much better. We’ve added marinaded mushrooms and the sauce is so much better. It smells and tastes like pizza too.

I have 2 more days till my 60-day project is over and it is exciting to finally be done with this. Not because I hate this food and want to dive into the junk, but I just want to take this commitment off of my shoulders and be able to enjoy other things, like smoked salmon, or a stake with mashed potatoes, once in a while. My plan is to continue on raw food for the most part of the day and for dinner have something that has cooked ingredients in it. Relax a bit for a while.

If this weight doesn’t start to melt off again anytime soon I may need to do something else though… I have not lost anything in the last week. I must agree with Jenni though, it’s a good thing I did not gain anything. I’ve also started doing PE with the kids in the afternoon, so maybe I am starting to grow muscle and that is what is holding the weight. Not sure… hoping to figure it out soon. So let’s get back to the pizza.

Tomato Pineapple Raw Pizza Recipe

Pizza Ingredients:
Lettuce Leafs
Thinly Sliced Tomatoes
Chunks of Pineapple
Chopped up Cilantro
Mushrooms Marinaded in Tamari for 10 minutes

Pizza Sauce Ingredients:
5 Tomatoes cubed
1/2 Red Bell Pepper
1/2 cup Sun Dried Tomatoes
1 tbsp Oregano
1 tbsp Basil
1 clove of Garlic
1 tbsp Salt

To make the sauce just blend all the sauce ingredients in a food processor. Use the lettuce leafs as your base or “dough”, then spread the sauce on it. Pile the toppings on top as you like and enjoy. Raw pizza is awesome!!
