Weight Loss Day 74: Nuts & Caramel RAW Dessert Recipe

After coming home from shopping for Thanksgiving and avoiding buying candybars and pastries I decided that instead I should make a RAW dessert for us to enjoy. This is how the raw Nuts & Caramel dessert was born.

It was another average day that started out with and apple and followed by a juice, a Green Lemonade to be exact. I am trying to take it light as much as I can this week before the Thanksgiving feast, at which I am not planning to stuff my self but still, there is going to be a lot of good cooked food so I don’t want to gain too much weight on this day.

At lunch I had another version of a salad, just some lettuce, cucumbers, carrots, grape tomatoes, mushrooms and a few olives. I must tell you about the dressing, it is something I found in The Raw Food Detox Diet book. The flavor is almost like a Caesar dressing but a little sweeter, it’s called Liquid Gold Elixir. Very good dressing!

Dinner was just a bunch of left overs so I did not tape it but instead I taped the recipe of the Nut’s & Caramel Dessert as I was making it. There was no recipe, it is just something I threw together as you watch right there on video.

Nuts & Caramel RAW Dessert Recipe


Base Layer
3 cups Brazil Nuts
10 Dates
1 tstp Vanilla
4 tbsp Honey
1 tsp Salt

Nut Layer
2 cups Walnuts
10 Dry Figs
4 tbsp Honey

Caramel Sauce
2 Apples
8 Dates
4 tbsp Honey
1 tsp Vanilla
1/2 tsp Salt

Begin with the Base Layer by grinding up the Brazil Nuts in a food processor until they are chopped up pretty fine. Add the Dates into the mix and chop again until those are all ground up. Pour this into a large bowl, add the rest of the Base Layer ingredients and mix by hand until it is all well mixed.

For the Nut layer, put the walnuts into a zip-lock bag and beat it with a rolling pin or a meat tenderizing hammer, or just get a glass jar or a rock, whatever you have available. The idea is to crush the nuts a little, so they are about 1/2 inch pieces in average. Cut up the figs into pieces about the same size. Put all of this into a bowl and add Honey. Mix by hand until all is mixed well.

Caramel sauce starts out with 2 apples, cut them into 4 and clean out the seeds. Add it to the food processor and grind it up well. Add the dates and buzz it again until all ground up nicely. Add the rest of the ingredients and run it for about 2 minutes so it is nice and blended into a sauce consistency. It will look like apple sauce but taste like caramel.

To plate it, take a table spoon of the base layer mix and roll/press it into a ball. Put it on the plate and press down on it with something flat to form a base cookie shape. Take a table spoon of the Nut layer mix and form a ball in your hands and place it on top of the Base layer. You can press it down a bit if you like so it doesn’t roll away. Add a table spoon of the Caramel sauce on the top of the Nut layer and you have a beautiful raw dessert. Now enjoy it!
